I'm back with another meal to make ya mouths water and your bellys rumble.I have never had this combo in porridge form before except fried  and that's fried plantain with fried sweet potatoes but when I was thinking of what we will have for dinner I came up with this.I initially wanted to make unripe plantain porridge which I made HERE but I decided to go with sweet potatoes just to experiment really.
It's cooked like any other porridge eg yam porridge or beans and plantain porridge which I also have a recipe of HERE

Sweet potatoes-5 tubers
Plantains(unripe and partially ripe)-4
Palm oil
Curry and thyme
Ground tomatoes and pepper
Ground dry pepper
Fresh ginger and garlic(grated)
Ugwu aka pumpkin leaves

I chopped the potatoes and plantain and put them in a pot with very little water.Water did not get to the top,then I sliced a medium sized onion and let it cook till soft.Note:I had not put in salt yet.

For this porridge I decided to fry.
Warning!!This is definitely not for #teamfitfam but this is how I choose to eat mine.

I fry the onions first till it's transparent,next goes my ground tomatoes and pepper.I leave for about 10 minutes to fry well so I can get rid of any sour taste from the tomatoes.
This is the part of cooking that makes it seem so easy.We just dump everything in-maggi,crayfish,grated ginger and garlic,salt,pepper,thyme,curry,dryfish etc.

Once that has cooked for about 2 minutes I pour into my cooked sweet potatoes and plantain and stir.

 Lastly my ugwu goes in and I take off the fire almost immediately.

Just like that food is ready and oh so delicious!! I can't stress how much we enjoyed this.I'm glad I have some leftover I will consume today and I will have to use sense because everybody would want to share.Maybe hide and eat??hehe like a thief in my own house? Nah.I'll just say mummy is the queen and deserves to have it.

  1. Honestly, this is the first time i am seeing this combination; plantain & potato porridge. I have however thought of it when a friend once asked about it but never gave it a trail.

  3. This looks YUM!! And seeing that fresh ugu just made me nostalgic. I often use spinach because no fresh ugu close by. I'll try this someday!
